West African Beans and Plantain Pottage Ingredients

1/2 lb beans soaked overnight and rinsed.

4 cups water.

1 onion finely chopped.

2 tbsps parsley chopped.

1 discs plantain peeled and cut into.

handful spinach of very finely chopped or patchoi.

1 cup pumpkin cubes.

to taste Salt.

1 pack sorrel dried.

5 cups water.

4 cinnamon sticks.
Cooking Instructions
Step 1
Put beans and water in a pot and bring to the boil. Skim off the layer of foam..
Step 2
Reduce heat and simmer for 15 mins..
Step 3
Mix in the onion, fish flakes and pumpkin and let simmer for about 1.5 hr or until the beans are done to your taste..
Step 4
About 15 mins before the beans are ready stir in the plantains and parsley..
Step 5
Cover the pot and cook till the plantain is done..
Step 6
Stir in the chopped spinach, adjust seasoning and serve with some rice..
Step 7
Add sorrel, water and cinnamon sticks in a pot and bring to a boil..
Step 8
Boil for 10 mins, then turn off heat and allow to steep..
Step 9
Strain and collect liquid..
Step 10
This makes a concentrated drink..
Step 11
Pour 1/4 cup of concentrate into a glass and fill with water..
Step 12
Sweeten with honey or sugar to taste..
Step 13
The concentrate will stay in the fridge for several weeks in an air tight bottle..
