You can easily cook Traditional Carrots-Jaggery Rice by following 11 ingredients and just 11 steps. Here is cooking guidance how you can easily cook that.
Ingredients
1 | You need 1& half Cups of Long Grain Rice. |
2 | It’s 200 g of Jaggery or to taste. |
3 | Take 1 cup of water for the syrup. |
4 | About 1 tbsp of milk. |
5 | It’s 4medium of Carrots grated. |
6 | It’s 3 tbsp of Ghee or Clarified Butter. |
7 | About 1 tbsp of Fennel Seeds. |
8 | You need 1/2 tsp of Cinnamon powder. |
9 | You need 1 tbsp of Melon seeds kernels. |
10 | Prepare 1 tbsp of mint juice. |
11 | Prepare 1/2 Cup of Mixed dried fruits (blanched almonds, raisins, chopped dates,cashews). |
Cooking Guidances
Step 1 | Soak Rice in Water for an hour.. |
Step 2 | Wash and Grate Carrots and keep aside.. |
Step 3 | Blanch Almonds and remove their skin and cut them into halves. Also deseed and chop some dates. You can also add raisins and cashews or desirable dry fruits.. |
Step 4 | Now boil rice and strain.Keep aside.Dip small amount of rice in mint juice for green coloured rice.. |
Step 5 | For the syrup, in a pan heat one cup water and when it comes to a boil add jaggery. Keep stirring and let the jaggery melt in water.. |
Step 6 | Add a spoonful of milk and a scum will form on top. Spoon out the scum and throw it away. That's the impurity in jaggery which we don't want to add to the rice. Turn the flame off and keep the syrup aside.. |
Step 7 | In a pan add ghee and when ghee melts add fennel seeds,cinnamon powder,cardamom seeds. Let them crackle that is when you add grated carrots to the pan and saute in ghee for a minute… |
Step 8 | Add the dried nuts which we had chopped earlier.. |
Step 9 | Add boiled rice.. |
Step 10 | Lastly add the jaggery syrup and cover with the lid.Keep for 8-10 minutes on simmer flame.Now Switch off the flame.Add the rice which are dipped into mint juice.Mix with fork.. |
Step 11 | Transfer into a serving bowl.Garnish with some more chopped dry fruits.Serve it hot and enjoy the winter.. |
