Coconut Rice Ingredients

. Cooked rice – 1 cup.

. Grated coconut – 1/2 cup.

. Coconut oil – 1 tbsp.

. Mustard – 1/2 tsp.

. Cumin – 1/2 tsp.

. Broken red chilli – 1.

. Curry leaves – 5 – 6.

. Ginger – 1 tbsp grated.

. Hing – pinch.

. Channa dal – 1 tsp.

. Peanut – 1 tbsp.

. Cashews – 1 tbsp.

. Salt – as needed.

Cook rice with bit of salt and 1 tsp of oil. Cool this completely..

Heat oil in kadai add mustard, cumin, red chilli curry leaves. Once mustard splutter add chopped ginger and hing. Saute a bit..

Add channa dal, peanut, cashews. Once channa dal and cashews turns golden colour add grated coconut and coriander leaves. Saute couple of minutes..
Step 4
Add this to rice and mix this thoroughly. Adjust salt level and serve hot..
