Spicy Mutton Stew & Coconut Rice Ingredients

1 k diced mutton.
2 onions.
3 garlic.
4 white pepper.
5 medium curry powder.
6 tomato puree.
7 coriander.
8 black mustard seeds.
9 carrots finely diced.
10 green pepper finely diced.
11 lrg cup white rice.
12 full fat coconut milk.
13 desicated coconut.
14 salt.
15 lamb/goat stock.
16 lemon.
17 pineapple or mango chutney to serve.

Cooking Step by Step

Step 1 To a pan add some oil, then fry off onions and garlic on a low heat so it cooks slowly, then add all the powder and seeds. cook off for a few mins to release the oils..
Step 2 .add the mutton with the tomato puree and cook off until browned off. finely dice the veg and add to the mix..
Step 3 Add half a pint of stock and half a can of coconut milk and cook gently for an hour and a half..
Step 4 Cook off rice until nearly done, drain, add the other half a can of coconut milk and cook for a few mins, stir and add half a bunch of coriander..
Step 5 Add the desicated coconut to the mutton and stir. Once the rice is ready, add a portion to the plate and add a portion of mutton with added corianfer and a spoonful of chutney.
