Eba is a Nigerian staple food eaten all over the country and beyond. It is made from fried grated cassava (manioc) flour, commonly called as garri. Most of the Soups you would learn to prepare from this blog are not usually served alone in Nigeria. You can simply prepare Vegetable soup and eba by following 7 ingredients and only 4 steps. Ingredients

1 Take 2 bunch of ugu leaf.
2 About 1 bunch of waterleaf.
3 Take of Palm oil.
4 You need of Crayfish.
5 Take of Beef.
6 Take of Dryfish.
7 Approximately of Salt and maggi.

This really look like Ghana's soup. A classic African dish which can be served as an accompaniment to dishes such as Egusi Soup. This my first attempt at eba. It came out a but lumpy.

Cooking Step by Step

Step 1 Wash the ugu and cut it, then keep aside.
Step 2 Boil the meat and dry fish with onions, salt and maggi until cooked then add palm oil to it and more onions.
Step 3 Let the meat stock dry then add the vegetable and stir the pot.
Step 4 Add your crayfish and taste for seasoning then let it boil for 4 minutes.

Start preparing the eba once the egusi soup is almost ready. A wide variety of soup vegetable options are available to you, such as material, processing type, and type.
