Traditional Tripe and Potato Stew Ingredients

1 tripe (beef or sheep) washed and cut into pieces.
2 Water as needed (enough to cover tripe to start).
3 potatoes, peeled and cut into quarters.
4 onion, chopped.
5 garlic cloves, crushed.
6 curry powder.
7 Salt.
8 Cayenne pepper to taste (optional).
9 brown onion soup mix.

Cooking Step by Step

Step 1 Cover the tripe with water and simmer for approximately 3 hours..
Step 2 Add the potatoes, onions, garlic, curry powder, salt and cayenne pepper. Stir to mix it all in..
Step 3 Mix onion soup with a dash of water to form a paste. Add to the stew..
Step 4 Add more water as needed if stew starts to dry. Simmer pot for 30 minutes or until potatoes are fully cooked..
Step 5 Serve hot over pap or samp..
