Sweet potato porridge with ugba and ugu Ingredients

3 big tubers of sweet potatoes.

1 big onion bulb.

6 pieces yellow fresh peppers.

1 cup crayfish.

1 cup ugba (oil bean).

3 cups washed and sliced ugu leaves.

2 tablespoons dadawa.

1/2 cup palm oil.

1 spoon salt.

2 cubes Maggi magic pot and 1 cube of royco goat meat.
Cooking Instructions
Step 1
Pound the pepper, crayfish, half of the onion and dadawa together. Set aside..
Step 2
Slice the remaining onion..
Step 3
Wash the ugba..
Step 4
Peel the potatoes, cut into chunks, wash and transfer to a pot.
Step 5
Add the chopped onions, pounded pepper mix, salt, seasoning cubes and 3 cups of water..
Step 6
Boil till potatoes are almost done then add the ugba and palm oil. Cover and allow to cook for another 5 mins..
Step 7
Add the sliced ugu leaves, mix, check for seasoning and adjust where necessary..
Step 8
Turn off the heat and serve.
