Sweet potato porridge with ugba and ugu Ingredients
||3 big tubers of sweet potatoes.
||1 big onion bulb.
||6 pieces yellow fresh peppers.
||1 cup crayfish.
||1 cup ugba (oil bean).
||3 cups washed and sliced ugu leaves.
||2 tablespoons dadawa.
||1/2 cup palm oil.
||1 spoon salt.
||2 cubes Maggi magic pot and 1 cube of royco goat meat.
||Pound the pepper, crayfish, half of the onion and dadawa together. Set aside..
||Slice the remaining onion..
||Wash the ugba..
||Peel the potatoes, cut into chunks, wash and transfer to a pot.
||Add the chopped onions, pounded pepper mix, salt, seasoning cubes and 3 cups of water..
||Boil till potatoes are almost done then add the ugba and palm oil. Cover and allow to cook for another 5 mins..
||Add the sliced ugu leaves, mix, check for seasoning and adjust where necessary..
||Turn off the heat and serve.
