Spicy Coconut Soup with Vegetables and Tofu (Sayur Lodeh Pedas) Ingredients
1 | 200 gr tempeh (soy bean cake). |
2 | 2 chokos. |
3 | 200 gr white tofu. |
4 | 1/2 red onion. |
5 | 3 garlic cloves. |
6 | 3 long red chilies. |
7 | 3 jalapenos (optional). |
8 | 2 cups coconut milk. |
9 | 1 cm galangal. |
10 | 1 bayleaf. |
11 | 2 cups water. |
12 | 1/2 tsp salt. |
13 | 1/2 tsp pepper. |
14 | 1/2 tsp sugar. |
15 | 2 tbsp cooking oil. |
Cooking Guidances
Step 1 | Cut up tempeh, tofu, and chokos, put aside.. |
Step 2 | Grind red onion, garlics, and long red chilies, put aside.. |
Step 3 | Pre-heat cooking oil in a pot, cook ground ingredients until a little bit dry, add salt, sugar, pepper,galangal, jalapenos, and bayleaf, add water, mix well.. |
Step 4 | Add chokos, tempeh, and tofu, wait until they are cooked properly.. |
Step 5 | Add coconut milk, stir it until the soup boils properly.. |
Step 6 | Serve it with steam rice, perfect to consume on cold days.. |
